Ingredients:
1 cup all-purpose flour
1/2 cup ground flaxseeds
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup Villicados extra virgin avocado oil
1/2 cup granulated sugar
2 large eggs
1/2 cup soy milk
1 tsp vanilla extract
3/4 cup frozen blueberries (do not thaw)
Instructions:
Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
In a large bowl, whisk together the flour, ground flaxseeds, baking powder, baking soda, and salt.
In a separate bowl, whisk together the avocado oil and sugar until well combined. Then, add the eggs, soy milk, and vanilla extract, and mix well.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Gently fold in the frozen blueberries.
Spoon the batter into the lined muffin cups, filling each cup about 3/4 full.
